‘Migalmaegisal’ has been standing at the entrance of Jongno Galmaegisal Alley for a long time. When the cool weather arrives, the store is always crowded with customers dining at the outdoor tables stretching from the front to the side.
You can find special cuts of domestic pork, such as galmaegisal (galmaegisal), gabri (sal), and jeongjeong (sal), all fresh and raw. The representative menu item, 'Galmaegisal', boasts a clean taste without any unpleasant odour, as the owner carefully removes fat and membranes every day.
The characteristic feature of the fresh, pink galmaegisal is that it is grilled whole rather than cut to preserve the rich gravy. The sauce, made by adding mustard and lemon juice to soy sauce flavored with spicy peppers and aged, plays the role of licorice that brings out the flavor of the meat.
We recommend dipping the meat in the sauce and then adding perilla seed powder and soybean powder to enjoy the rich flavor.
